Happy Valentine’s Day from Beatrix Cakes. Things were pretty quiet around here, baking-wise, but we celebrated the day with Beatrix’s great-grandmothers and shared some heart-shaped shortbread cookies.
The day before I baked a Jamaican ginger cake for a friend’s birthday party. Made with butter, brown sugar, and fresh grated ginger root, it was moist and flavorful, really a ginger pound cake. I topped it with a fresh lemon glaze and served with whipped cream. Beatrix sat in my lap at the table and watched as the candles were blown out.
